This recipe came about in a fit of frustration!
I had wanted to make the greens my mother made for Thanksgiving, but when I looked at the can of collard greens that she uses I noticed the words "southern style" and "seasoned". Curious as to what would make them "southern style", I decided to read the ingredients. I was aghast when I found that they contained bacon fat and pork!
Since I had all the other ingredients in my cart, I decided to try veganizing the recipe. I think it turned out to be a success!

Yum, yum and yum! I LOVE collard greens and love the fact that you made them vegan! I recently just made the switch to a pescatarian diet. Giving up meat hasn't been as hard as I thought it would be, but I am worried about holidays (Easter, Thanksgiving, etc). My mom makes amazing collard greens, but uses ham. Now I have a nice alternative recipe I can share with her.

ReplyDeleteI think if you like vegetables, the switch shouldn't be that hard. I hope you try these... even my nieces and nephew like them!
