When I decided to focus on eliminating dairy and eggs from my diet, cheese was a hard sell. I have always been a fan of macaroni and cheese. In college I would make it (from the blue box) and add in some sort of veg - broccoli, peas, cauliflower. I was worried that my mac and cheese days were over. I knew that there would be alternatives, but would they satisfy me as much as the real deal?
Gin over at
Eat Healthy, Be Healthy has a great cheese sauce recipe. It is vegan and low fat... made from vegetables, with no nuts or oils. She calls it
Life Changing Vegan Cheese Sauce, and I'd have to agree. I made this and couldn't help licking the edges of the blender or the spoon afterwards.[amd-zlrecipe-recipe:10]

I am going to need to check out that cheese sauce!
ReplyDeleteInteresting! I've made cheese with cauliflower, nuts, nutritional yeast, and a few other ways but never with potatoes as a base, and carrots for color... I'm going to have to try it because I'm trying to figure out what gives it the cheese flavor. Thank you for linking up with us, happy Meatless Monday!
ReplyDeleteThis looks great! I'll need to try that sauce!
ReplyDeleteit is quite good... I was licking it out of the vitamix.
ReplyDeleteYou know... I'm not sure. I know I had the nutritional yeast out because I was certain it needed some in it, but it really didn't.
ReplyDeleteThe sauce is really good!
