I love a baked potato… seriously, who doesn’t. When you combine it with healthy ingredients, it makes it a meal upon itself.
I am a fan of spicy food, so this baked potato has a little spice to it from the pico de gallo. I’ve also added black beans for a little protein.
I recently learned that you can make baked potatoes in the crockpot, they turn out just like the oven baked ones… so no heating up the kitchen!
The cheese sauce is from the Forks Over Knives cookbook. It is… oh, so good… I could just eat it plain with a spoon,
