Vegan Tex-Mex Loaded Baked Potato

picsart_06-26-07.16.15.jpgI love a baked potato… seriously, who doesn’t. When you combine it with healthy ingredients, it makes it a meal upon itself.

I am a fan of spicy food, so this baked potato has a little spice to it from the pico de gallo. I’ve also added black beans for a little protein.

I recently learned that you can make baked potatoes in the crockpot, they turn out just like the oven baked ones… so no heating up the kitchen!

The cheese sauce is from the Forks Over Knives cookbook.  It is… oh, so good… I could just eat it plain with a spoon,

 

Buffalo Stuffed Baked Potatoes with Blue Cheeze Drizzle

Ingredients

2 large russet potatoes, baked

2 cups cauliflower, separated into small florets

1 handful soy curls, soaked in water for 10 minutes and drained

8 oz tomato sauce

8 oz hot sauce (I used Frank's)

2 TBS vegan butter

1-2 ribs of celery, sliced

Instructions

Combine the cauliflower, soy curls, tomato sauce, hot sauce, and butter in a sauce pan and cook until the cauliflower is tender and the sauce has reduced a bit... about 20 minutes.

Cut open the baked potato and squish it open.

Divide cauliflower mixture between the potatoes.

Sprinkle sliced celery on top.

Drizzle with Blue Cheeze dressing.

    I have been making baked potatoes in a crockpot for many years — it’s really easy.

    I’m not sure how I’d love a savory potato like that but I need to try it sometime!

    I really love baked sweet potatoes. For the longest time, I just had them plain as a side. But I love how you creatively make a meal out of them by loading them up with great proteins! I can’t wait to try this. Yum!
