I admit… I have never liked eggs. I don’t care for the taste, and they always make me burp. Scrambled tofu, I like.
When I found this recipe for scrambled tofu, made with aquafaba from Ashley over at Blissful Basil, I was intrigued.
The thing is with scrambled tofu is the tofu doesn’t really stick together after you’ve made it. Ashley’s creation does!
I thought it would be a great ingredient for some breakfast burritos! I combined the scrambled tofo with some of that No-Cheese sauce from Forks over Knives that I can’t seem to get enough of and some pico de gallo. You could also add some beans or switch out the pico for some salsa.. lots of options to customize to your taste.
