Summer’s Bounty Salad

wp-1470362944855.jpgIt isn’t a secret that I love summer.  I love the warm temps (as much as I complain about them) and the long days.

It isn’t just a coincidence that my favorite time of the year is also when the freshest locally grown produce is available. I LOVE fresh produce!!

This salad is a combination of all the good summertime flavors.

 

 

 

 

Summer's Bounty Salad

Ingredients

2 ears corn, shucked and kernels removed

2 avocados, chopped

1 cucumber, peeled, seeded, and chopped

3-4 tomatoes, chopped

1 jalapeno pepper, seeded and minced

1/2 red onion, diced

1/4 cup cilantro, minced

4 TBS fresh lime juice

2 TBS olive oil

salt and freshly ground pepper to taste

Instructions

Combine all ingredients and serve.
