This has got to be the laziest “Healthy Vegan Friday” post there ever was.
I can’t even take credit for the recipe.
All I can tell you is that after making the Roasted Broccoli, Sweet Potato, and Chickpea Salad from Minimalist Baker, I began to wonder if this would make a good Buddha bowl.
I have a confession to make… I’ve never made a Buddha bowl. While I’m confessing… I’ve never had roasted broccoli either, I can’t believe I have been missing out on that for so long either!
I quickly consulted Google to determine the proper make up of a bowl, and found that it was missing one ingredient – a grain. I found some farro in my pantry and cooked it up. Assembled the ingredients and voila! I had made my first Buddha bowl.
So there… that is it! Grab the recipe for Roasted Broccoli, Sweet Potato, and Chickpea Salad, cook up some Farro… layer it in a bowl and nosh to your hearts content.
It must also be said that the Roasted Broccoli, Sweet Potato, and Chickpea Salad is equally good on it’s own!
p.s. I added a small onion halved and sliced to the roasted vegetables.
