I’m not sure this can even be considered a recipe, given it is super easy and takes less than 5 minutes to prepare.
I love this meal for weeknights when cooking seems like too much trouble. It is also great in the summer-time as it does not require use of oven or stovetop.
Uncle Ben’s ready rice makes preparation a breeze, only takes 90 seconds in the microwave. Canned beans and prepared pico de gallo speed things up as well.
Quick Black Beans and Rice
1 package Ready Rice - Brown Rice
1 can black beans, drained and rinsed
1 cup pico de gallo
Veggie cheese shreds
Prepare the rice according to package directions
Heat the beans in the microwave for 60 seconds
Combine rice, beans, and pico de gallo in bowl
Serve with salsa and cheese shreds, if desired
