Lentil Sloppy Joes

I went a little “school lunch” retro today – Sloppy Joes!

The hubs is a huge fan of sloppy joes, he could eat them every week. Of course his are made with either ground buffalo or beef, but it got me thinking… could I make sloppy joes for myself that were plant based.

I had some lentils left over from when I cooked lentil taco meat, and thought that would be a great substitute for the meat.  I substituted a bolo roll for the hamburger bun and just cut it open on one side, pulled out a little bread and stuffed it with my sloppy joe filling.  It was fantastic and not too sloppy!

Lentil Sloppy Joes

1/2 green pepper, diced

1/4 onion, diced

olive oil for skillet

1 1/2 cups cooked green lentils

1/2 cup ketchup

1 TBS yellow mustard

1/2 TBS Braggs liquid aminos

1 TBS brown sugar

1 tsp garlic powder

1 tsp oregano

1/2 tsp paprika

1 TBS Siracha

salt & pepper to taste

salt and pepper

1 TBS Tabasco, or more to taste

Sauté the onion and green pepper until soft.

Add remaining ingredients and cook until heated through and at desired consistency, about 10 minutes.

Serve on buns or stuffed into rolls.

What a great idea using the lentils! I have to confess, I have never actually had Sloppy Joe’s but this looks pretty yummy!

Sometimes we make sloppy joes with soy crumbles. But lentils sound waaaay better!!

I’ve made with the soy crumbles too… these feel a bit lighter.

Would you believe I have never had sloppy joes? It’s not something we had growing up. I’m totally digging this awesome plant based version =)

It’s hard to believe! It was a staple in my childhood – maybe it’s a Midwestern thing.
