Caprese Salad

fontover_201671883647509.jpgGarden grown tomatoes and fresh basil scream summer to me!

When temps are high, there is no desire to turn on the oven.

This dish is very easily made and is quite cool and refreshing.

Use your favorite fresh mozzarella or make your own.  I like this mozzarella from VNutrition.

    The perfect summertime salad!

Yes, homegrown tomatoes really make it taste the best!

I survived a whole summer off nothing but this salad! Really missing the fact that we don’t have a garden this year (because we are gone over half the summer and just wouldn’t be able to keep it up) one of my favorite things to make with all the tomatoes and basil. Thank you for linking up with us!

I could totally see eating nothing but this all summer 🙂

Sadly, with the whole Bandit brouhaha, I never did get any plants for my garden. 🙁

I didn’t get a garden in this year either… relying on friends, roadside stands and farmers markets to get my fresh tomato fix.
